This is a creative and delicious way to use lavender buds for a warming drink on Valentine's Day. We add toasted cinnamon that combines wonderfully with the sweet flavor and scent of lavender flowers.
Lavender Cinnamon Hot Chocolate
3 cups whole milk or half and half
2 tsp dried lavender buds
3 tbsp cocoa powder, or hot chocolate powder
2.5 tbsp sugar (if using hot chocolate powder omit sugar)
1.5 tsp cinnamon
Set a pan on the stove on medium heat. Add the cinnamon and stir briskly as it heats. It will begin to smell toasted and darken. As soon as you see a whisp of smoke, pour in the milk. Bring milk to boil, add lavender flowers, then bring to simmer, stirring to prevent boil over. After about two minutes remove from heat and let steep three minutes more. Strain lavender flowers with a mesh sieve. Add cocoa powder and whisk OR add milk and cocoa powder to a thermos and shake.
